Cviček Zajc is unique and famous Slovenian wine, made from specific red and white vine varieties which are grown in a specifically determined area in the Dolenjska region.


FULL CIRCLE WINES
Our idea behind full circle wines is to return to the ancient wine making traditions and old school wines our region was known for in the Middle Ages. Fermented with no added yeasts and bottled without filtration, these wines truly represent the terroir of Dolenjska.

Cviček is a unique red and white wine blend of controlled origin and composition and is product of minimal intervention winemaking. Playful berry aromas, crisp acidity and light body create a fresh and inviting wine for any occasion. Enjoy it chilled!

Very hilly vineyards facing South above 210 m. asl

Soil

A diverse geological soil composition, consisting mainly clayey and marlstone. The vineyards spread out over the finest wine-growing sites on the hill slopes between river Sava in Krka in South-East Slovenia.

Harvest notes

Cold and wet spring, hot summer and rainy late summer and autumn. Relative high sugar and lower acidity levels. Multiple manual harvests from 5th till 23rd of September. On the same day of each harvest were the white sorts pressed and the red sorts put into vinificators.

A culinary tip

People of the Dolenjska region like drinking it at the traditional Sunday lunch or when they eat Carniolan spiced pork sausage. It goes perfectly with veal in sauce, meat rolls or tenderloin.
