Wine is an <a href=\"http:\/\/en.wikipedia.org\/wiki\/Alcoholic_beverage\">alcoholic beverage<\/a>, resulting from <a href=\"http:\/\/en.wikipedia.org\/wiki\/Ethanol_fermentation\">alcoholic fermentation<\/a> of grape juice or <a href=\"http:\/\/en.wikipedia.org\/wiki\/Must\">must<\/a>. The Slovenian word for wine, <em>vino<\/em>, derives from the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Latin\">Latin<\/a> <em>vinum<\/em> that means both wine and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Vine\">vine<\/a>. The alcoholic fermentation process is caused by micro-organisms (<a href=\"http:\/\/en.wikipedia.org\/wiki\/Yeast\">yeasts<\/a>) which slowly transform sugar into alcohol.<\/p>\n\n\n\n<p>Out\nof more than one hundred different grape varieties (<em>Vitis sp.<\/em>), only a few tens are suitable for growing grapes for\nwine, jointly named <em>Vitis vinifera<\/em> by\nbotanists. Each grape variety has its official name and usually several folk,\nlocal and national versions as well. In connection therewith, wines can be\nbasically divided into: <\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong><a href=\"http:\/\/en.wikipedia.org\/wiki\/Varietal\">varietal wines<\/a>, produced from a single grape variety <\/strong>(such as\u00a0 Welschriesling)<\/li><li><strong>and <a href=\"http:\/\/wine.lovetoknow.com\/wiki\/What_Is_a_Wine_Blend\">blends<\/a><\/strong> (<a href=\"http:\/\/en.wikipedia.org\/wiki\/French_language\">fr.<\/a> <a href=\"http:\/\/en.wikipedia.org\/wiki\/Cuv\u00e9e\">cuv\u00e9e<\/a>) which are so to speak mixtures of various varietal wines (such as <em>Cvi\u010dek<\/em>).<\/li><\/ul>\n\n\n\n<p><strong>A wine-growing region<\/strong> stands for a <a href=\"http:\/\/en.wikipedia.org\/wiki\/Geography\">geographically<\/a> limited territory, where <a href=\"http:\/\/en.wikipedia.org\/wiki\/Vine\">vine<\/a> is grown and where <a href=\"http:\/\/en.wikipedia.org\/wiki\/Wine\">wine<\/a> is produced. The delimitation of wine-growing regions (and indirectly also<a href=\"http:\/\/en.wikipedia.org\/wiki\/Organoleptic\"> organoleptic<\/a> properties of wines) is subject to <a href=\"http:\/\/en.wikipedia.org\/wiki\/Geology\">geological<\/a>, geographical, <a href=\"http:\/\/geography.about.com\/od\/geographyglossaryr\/g\/ggrelief.htm\">relief<\/a> and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Climate\">climatic<\/a> conditions as well as to the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Viticulture\">wine-growing (viticultural)<\/a> <a href=\"http:\/\/en.wikipedia.org\/wiki\/Tradition\">tradition<\/a> with its selection of grown <a href=\"http:\/\/en.wikipedia.org\/wiki\/List_of_grape_varieties\">varieties<\/a> and production methods. <a href=\"http:\/\/en.wikipedia.org\/wiki\/Slovenia\">Slovenia<\/a> is divided into <a href=\"http:\/\/en.wikipedia.org\/wiki\/3_%28number%29\">3<\/a> wine-growing regions: the Drava Valley, Lower Sava Valley and the Littoral. <em>Cvi\u010dek <\/em><sup>PTP <\/sup>can be found exclusively in the Lower Carniola (Dolenjska) district, which forms part of the Lower Sava Valley wine-growing region. Lower Carniola constitutes the largest wine-growing territory in Slovenia, extending along the right bank of the river <a href=\"http:\/\/en.wikipedia.org\/wiki\/Sava\">Sava<\/a>, the banks of the river <a href=\"http:\/\/en.wikipedia.org\/wiki\/Krka_%28Slovenia%29\">Krka<\/a> and the slopes of the Gorjanci Hills all to the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Croatia\">Croatian<\/a> border to the south-east.\u00a0 <\/p>\n\n\n\n<p>Cvi\u010dek<em> <\/em><sup>PTP<\/sup> is a unique blend and the <strong>most renowned Slovenian wine<\/strong> that cannot be found anywhere else in the world. First records about this wine can be dated as far as the end of the 17<sup>th<\/sup> century (polyhistorian Janez Vajkard Valvasor). <em>Cvi\u010dek<\/em> saw its renaissance at the turn of the 20<sup>th<\/sup> century when grape phylloxera led to the renovation of many vineyards. According to records, <em>Cvi\u010dek<\/em> was taken to the wine fair in Prague in 1907 by Bohuslav Skalicky. As early as before World War I, <em>Cvi\u010dek<\/em> was sold by wine merchants for 1 Austrian Gulden (florin) per litre, while other wines on the market would cost between 40 and 48 Kreuzers per litre (1 Gulden = 100 Kreuzers, translator&#8217;s note). Following World War II, <em>Cvi\u010dek<\/em> was exported to Switzerland, Belgium, England and even as far as Brasil as well. Nowadays it is already known in the major part of Europe (especially in the EU), Northern America and Russia.<\/p>\n\n\n\n<p>Apart from the Tuscan Chianti, <em>Cvi\u010dek<\/em> is the only wine in the world with a legally protected\ncomposition of red and white grape varieties. The allowed red grape varieties\nare \u017dametna \u010drnina between 40 and 60 %; Modra frankinja (Blaufr\u00e4nkisch),\nPortugalka and \u0160entlovrenka maximum total 20 %. The allowed white grape\nvarieties are Kraljevina, Welschriesling, Rumeni plavec, Zeleni silvanec and\n\u0160tajerska belina, maximum total 35 %. This oddball among wines also bears the\nhigh mark of protection TSG (Traditional Speciality Guaranteed &#8211; PTP in\nSlovene). Since 2000 its production has been regulated by a stringent national\nlaw of the Republic\n of Slovenia (Rules\nConcerning the Wine Bearing the Mark of Recognized Traditional Denomination\n&#8216;Cvi\u010dek&#8217;, The Official Gazette of the Republic of Slovenia Number\n3\/2000 of 14 January 2000).<\/p>\n\n\n\n<p>The above-mentioned law lays down the production of\ngrapes to the very last detail (wine-growing sites over 210 meters above sea\nlevel, minimum 4.500 vines per hectare, maximum 9.000 grapes per hectare, &#8230;),\ngrape varieties and processing methods, the relative share of the grape\nvarieties in the wine, thresholds of the wine&#8217;s components (8.5\u201310.0 % alcohol per vol.; 6.0\u20139.5 g\/l total acid, unboiled (unfermented) sugar\nbelow 2.5 g\/l; free sulphur maximum 25 mg\/l). In view of the extent of\nwine-growing sites available, it is estimated that approximately 8 million\nlitres of <em>Cvi\u010dek<\/em> are produced on a\nyearly basis. <em>Cvi\u010dek<\/em> is traditionally\nproduced and consumed within the family circle. Only a small amount also\narrives on the market. The <em>Zajc<\/em> wine\ncellar is the largest private supplier of this unique wine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Organoleptic properties:<\/h2>\n\n\n\n<p><strong>Colour:<\/strong> Ruby red with a touch of violet<\/p>\n\n\n\n<p><strong>Taste:<\/strong> Cvi\u010dek&#8217;s taste is harmonious and smooth. Refined acid and a low alcohol level convey freshness and drinkability.\u00a0 <\/p>\n\n\n\n<p><strong>Aroma:<\/strong> A playful tiny berries (especially raspberries) and wild berries aroma can be perceived.<\/p>\n\n\n\n<p><strong>Gastronomy:<\/strong> Its dry (extremely low level of unboiled sugar) and neutral character open up an exceptionally broad spectrum of food the <em>Cvi\u010dek<\/em> goes excellently with. It does, however, always enrapture with traditional Slovenian dishes, when meat or dried meat products are served with sauerkraut and potatoes.<\/p>\n\n\n\n<p>Its lightness, gentleness and drinkability are most\nbeautifully revealed when chilled to 13\u201315 \u00baC. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cvi\u010dek&#8217;s healing properties<\/h2>\n\n\n\n<p>When it comes to wines, an exceptional number of\nhealing effects are ascribed especially to <em>Cvi\u010dek<\/em>.\nAmong all other wines in the world, it stands out for its combination of an\nextremely low level of unboiled sugar (Cvi\u010dek Zajc, year 2011, has 1 g\/l\nunboiled sugar) and a low alcohol level. The first makes it especially\nrecommendable for diabetics, while the latter places it among dietetic wines.\nAt the same time, it contains flavonoid substances with positive health effects\n(reduced cardiovascular risks) as well. <em>Cvi\u010dek<\/em>\nhas a favourable effect on digestion, promotes metabolism, prevents insomnia\nand strengthens the blood stream. Regular consumption prevents heart attacks.\nSeveral studies have concluded that regular consumption of the reddish wine <em>Cvi\u010dek<\/em> (1 to 2 glasses per day) improves\nthe antioxidant activity of the blood and prevents the aggregation of blood\nplatelets, thus reducing the risk for a stroke or heart attack. In that sense,\nethyl alcohol in the wine acts similarly to a solvent. Scientists examining\ncancer occurrence and development have found also many anti-tumour substances\nexactly in red wine. <\/p>\n\n\n\n<p>According to the cardiologist and head physician dr.\nPeter Kap\u0161, phenolic substances (of which exceptionally many can be found\nexactly in <em>Cvi\u010dek<\/em>) have long been\nknown for their significance as astringent substances that transform proteins\nin bacteria, thus rendering them incapable for life. The antioxidant\nsignificance of <em>Cvi\u010dek<\/em> has been\nsubstantially supported by results of research studies, which have been\nobtained by means of experiments performed in laboratories (\u201cin vitro\u201d) and on\nliving organisms (\u201cin vivo\u201d). By regularly drinking <em>Cvi\u010dek<\/em>, antioxidants and powerful antioxidant phenolic compounds,\nthat reduce the oxidation of lipoproteins, are absorbed, thus contributing to a\nreduced&nbsp; atherosclerosis and mortality\nrate as a result of coronary heart diseases. <em>Cvi\u010dek <\/em>contains more than 1200 different compounds. The most\nimportant ones also include Q10 that inhibits ageing, prevents degenerative\ndiseases, strengthens the immune system and reduces blood pressure. And the\nother one is the most frequently mentioned &#8216;miraculous&#8217; resveratrol, one of the\nmost important compounds for treating cardiovascular diseases and cancer. <em>Cvi\u010dek<\/em> is recommended regularly on a\ndaily basis after meals (1 to 2 decilitres per day), especially if we know that\nits healing effects also make it the most complex food in the world. It is\nunquestionably a generator of a cheerful mood as well. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Five properties of <em>Cvi\u010dek<\/em>:<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>It\nis a unique blend of white and red grape varieties, <\/li><li>it\nhas a very low alcohol level \u2013 less than 10\n%, <\/li><li>its\nextremely low residue of unboiled sugar makes it <strong>suitable for diabetics<\/strong>,<\/li><li>it\nis a freshly youthful and light ruby wine,<\/li><li>it\nis all-round welcome by all kinds of food, <\/li><li>it\nis unique and its production is limited in quantity. <\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Cvi\u010dek is a wine.
